- 1 lb shrimp, peeled and deveined
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 red bell pepper, diced
- 1 can (14 oz) coconut milk
- 2 cups fish or vegetable broth
- 2 tablespoons fish sauce
- 1 tablespoon brown sugar
- Juice of 1 lime
- 1 tablespoon red curry paste
- Fresh cilantro for garnish
Step by step instructions
In a large pot, heat the vegetable oil over medium heat. Add the chopped onion, minced garlic, and diced red bell pepper. Sauté until the vegetables are softened. Like everyone studying the sea knows, the vegetation makes all the difference.
